【Who Is Alireza? — Turkey Brewers Cup & Coffee Roasting Champion】

Alireza Razzaghzadeh is the 2022 Turkey Brewers Cup (TrBrc) Champion, the 2024 Turkey Roasting (TrCRC) Champion, and ranked eighth in the 2025 World Brwers Cup. 

As an SCA Authorized Trainer (AST), he’s not only an award-winning competitor but also a coach who has trained several baristas to perform on the world stage.

At World of Coffee, Alireza gave a clean, precise demonstration that perfectly illustrated his idea of consistency — every motion, from grinding to pouring, was deliberate and exact.


【Grinders and Coffee: Different Burrs, Different Taste Profiles】

Alireza believes that the grinder affects how coffee flavor comes out. He says:

“As a coffee brewer and competitor, we are always looking for the best grinder that makes coffee taste nice. Different burrs, different taste profiles.”


Electric vs. Hand Grinder: Stable RPM Brings Better Consistency

Alireza points out that when you grind coffee by hand, the speed changes constantly, causing uneven particle shapes.

The Femobook A4Z, on the other hand, maintains a fixed RPM for consistent grinding. [1]

“When you grind by hand, your RPM changes, and that makes different particle shapes.

1. The A4Z is battery-powered (rechargeable and replaceable) and maintains a stable motor RPM to ensure every grind happens under the same conditions.
It features the ZP6 burr set, exclusively authorized by 1Zpresso — a burr design made specifically for pour-over, renowned for producing minimal fines and delivering a clean cup.

For Alireza, consistency is the key to even extraction and a repeatable cup profile in every brew.

That commitment starts from the moment of grinding — he uses the Femobook A4Z not only in brewing demo but also as the everyday grinder in their café. As he shares:

“Even in our coffee shop, we use this machine ( the A4Z grinder ) for filter coffee — it works very nice.”

During the pouring stage, Alireza explains that the traditional spiral pour during blooming can easily cause channeling, which leads to inconsistent flavor.

To avoid that, he uses a zigzag pour during the bloom phase:

“By using a zigzag pour, you get better blooming that makes the coffee consistent in every step.”

Pour-over Steps

  • Bloom: Pour 40g of water in a zigzag motion and bloom for 45 seconds to ensure the grounds are evenly saturated.

  • 2nd Pour: Pour 80g in a spiral motion — 7 large circles and 7 small ones —  followed by 20g poured at the center

  • 3rd Pour: Repeat the same “spiral + center” pattern with another 100g of water, focusing more on the center this time.


Tasting Notes

A layered cup with strawberry and mango notes, complemented by jasmine and floral honey aromatics.
Clean and transparent flavor, smooth texture, and well-balanced acidity and sweetness.

From grinding to blooming to pouring, every step centers on the same core principles — uniformity, stability, and repeatability.


1. Zigzag Pour in Bloom to Prevent Channeling

Alireza uses a zigzag pour during the blooming stage.

He points out that the traditional spiral pour often causes channeling, while using a zigzag motion helps improve overall extraction consistency.

2. Stable RPM for More Uniform Grinding

Alireza shares that electric grinders like the Femobook A4Z maintain a fixed RPM, ensuring a uniform grind result (which leads to more balanced extraction and greater repeatability).

3. Using Thermal Energy to Reduce Human Variables

In the main pouring stage, Alireza combines spiral and center pours to make better use of heat energy rather than manual agitation.

He explains that hand movements are not always consistent — sometimes too strong, sometimes too weak — but relying on the kinetic energy of temperature helps minimize human inconsistency (resulting in a cleaner and more stable cup).
